Vegetable Kuruma
Vegetable Kuruma - Favourite with Porotta and Chappathi. Very healthy too because of the vegetables used.
Ingredients
Vegetables : Potato, Carrot, Green Peas,
Cauliflower, Beans - 2 cups
Green Chilly - 2
Turmeric Powder - 1/2 tsp
Red Chilly Powder - 1/2 tsp
Salt - to taste
Coconut - 1 cup
Khus Khus - 1/2 tsp
Ginger Garlic Paste - 1 tsp
Oil - 2 tsp
Cinnamon - 1
Cloves - 3
Cardamom - 2
Bay Leaves - 2
Onion chopped - 1
Capsicum chopped - 1/2 cup
Tomato chopped - 1
Coriander Leaves - 1 tbsp
Method
Cook the 1st set of vegetables with green chilly, salt, turmeric powder, red chilly powder and water.
Grind Khus Khus with some coconut and keep aside. Grind the remaining coconut to a paste.
Heat oil in a pan and suate crushed cinnamon, cloves, cardamom, and bay leaves.
Add the onions and capsicum and saute for some time.
When it gets fried, add the ginger garlic paste to this and fry for some more time.
Add the chopped tomatoes and mix for some more time.
Add the coconut grinded with khus khus to this.
Add the cooked vegetables and mix well.
Add the grinded coconut.
Boil for a minute and serve hot garnished with corinader leaves.
