Sambar
Sambar is one of the mostly used dish in South India, especially Tamil Nadu. It accompanies most every meal in South Indian states.
Ingredients
1. Tur Daal (Thuvara Parippu) - 125 g
2. Potato - 50 g
Onion (Big) - 25 g
3. Drumstick - 50 g
Lady's Finger - 100 g
4. Turmeric Powder - 1 tsp
Sambar Powder - 3 tsp
Chilli Powder - 1 tsp
Coriander Powder - 1 tsp
5. Tamarind - 1 lemon size
6. Asafoetida - 10 g
Tomato - 3 nos
7. Feungreek Powder (Uluva) - 1/4 tsp
8. Dry Red Chillies - 10
Mustard Seeds - 1 tsp
Coconut Oil - 50 ml
9. Curry Leaves - 2 springs
Coriander Leaves - 10 g
Method
In a hard bottomed pan, add tur dal along with some water.
When it starts getting cooked, add the square shaped Potato and Onion and cook everything together and mash them.
In another pan, pour oil and fry Lady's finger and Drumsticks. Add the 4th set of ingredients to this and fry for some more time.
Add the mashed Tur Daal and vegetables to this.
Take Tamarind Pulp and add some water to this and pour it into the above mixture.
Add Asafoetida and Tomato to this preparation. Add Salt also.
Sprinkle Fenugreek powder and fry the 8th ingredients and add to the mixture.
Garnish the Sambar with Curry leaves and Coriander Leaves and serve hot.
