Mixed Vegetable Curry
Mixed Vegetable Curry - Very common favourite with Chappathi. This is very healthy also because of low fat.
Ingredients
Vegetables : Carrot, Cauliflower, Beans - 2 cups (together)
Capsicum - 1 no
Tomato - 1
Green Chilly - 2
Turmeric Powder - 1/2 tsp
Red Chilly Powder - 1/2 tsp
Ginger - 1" piece
Garlic - 2 cloves
Garam Masala - 1 tsp
Salt - to taste
Oil - 2 tsp
Onion chopped - 1
Coriander Leaves - for garnishing
Method
Cook the 1st set of vegetables with salt, turmeric powder and water.
Boil the tomato in water, allow to cool, peel off the skin and grind to a paste.
Grind ginger, garlic, red chilly powder, turmeric powder, and garam masala to a fine paste.
Heat oil in a pan and fry the onions and capsicums until done.
Add the masala paste to this and fry for some time. Pour the tomato puree to this fried mixture and mix well.
When it gets fried, add the cooked vegetables and boil under the gravy thickens.
Serve hot garnished with coriander leaves.
