Kottayam Style Olan
Olan is a traditional Kerala dish usually made on occasions like Onam, Vishu and Weddings. It is served as a part of Sadya. This specific recipe is taken from an old edition of Vanitha, the women's magazine.
Ingredients
1.Ash Gourd (Kumbalanga) made into small pieces - 500g
Raw Pumpkin cut into small pieces - 100g
Nadan Vazhuthananga (Brinjal) cut into
small round pieces - 1/2 cup
Chembu cut into small pieces - 3
Green Chilly - 6 nos
2. Salt - as required
3. Vanpayar Cooked - 100gCoconut Oil - 10 ml
4. Thick Coconut Milk - 1 cup
Thin Coconut Milk - 2 cup
5. Coconut Oil - 1 tbsp
6. Curry leaves - 1 stem
Method
Cook the first ingredients along with thin coconut milk and salt.
Add the vanpayar and boil until all water is evaluated.
Add the thick coconut milk and once it starts heating up, remove from fire.
Pour the coconut oil and curry leaves on the top and serve hot.
