Drumstick Tomato Curry - A different type of curry for Rice and Chappathi.
Ingredients
Drumstick - 1 cup (chop it into 2 inch long)
Tomato - 1 (chop it)
Onion - 1 (chop it)
Turmeric powder - 1/4 tsp
Coriander powder - 3/4 tsp
Red chilly powder - 1/2 tsp
Salt to taste
Oil - 1 tsp
Mustard seeds - 1/4 ts
Cumin seeds - 1/4 tsp
Coriander leaves - to garnish
Asafoetida/hing - a pinch

Heat oil in a pan, splutter mustard seeds, cumin seeds and asafoetida powder, till it becomes golden brown.
Add the chopped onion and saute till it becomes transparent.
Add the chopped tomato along with chopped drumstick. Saute for couple of minutes.
Add required amount of water, turmeric powder and salt and let it cook for 5 to 7 mts till the drumstick is almost done.
Now add the coriander and chilly powder to the mixture and sauté for few more minutes.
Sprinkle a handful of water if necessary and turn off the stove when the required consistency is achieved.
Garnish it with coriander leaves.
